Two yeast strains are used for the brewing process: Saccharomyces cerevisiae or Saccharomyces carlsbergensis… Just o be picky, the modern taxonomic classification of the yeast classifies both under the Saccharomyces cerevisiae strain. Anyhow, yeast is a fungus. And it makes the beer. So remember this: brewer makes the worth, and yeast makes the beer.
