VISUAL ANALYSIS

Foam: white, excellent texture. Good persistence and adhesion to the glass surface.
Appearance: golden colour, crystalline appearance; deep golden reflections.
Effervescence: medium.

OLFACTORY ANALYSIS

Scent/ olfactory sensation: hay, cereals and soft biscuit hints, a touch of honey, clear suggestions of resin.
Intensity of aroma: medium-low.

Refinement of aroma: pleasant.

GUSTATORY PERCEPTION

Tactile sensation: medium-bodied, fine and soft carbonation.
Intensity of aroma: medium-low.
Taste: fine resiny bitterness, low malty sweetness.
Olfacto- Gustatory sensation/ back aroma: grass and hay are pleasantly noticeable during all the drinks. Soft flavor of biscuits/ bread crust and grains. Generous resin. Super delicate aroma of grapefruit

Persistence of aroma/ end: medium.

OVERALL IMPRESSION: I appreciate the hay- resin- grapefruit balance, and the fine bitterness. One of the most thirst-quenching and sessionable Italian craft ale ever tasted!

 

VEG FOOD PAIRING: delicate veggie pies, pasta with fresh and fat cheeses; boiled potatoes, carrots and celery salad with a sprinkle of citrus juice and tasty cheese (fresh Pecorino for example), served with fat seasoning.
